Who would have thought…
…that a hobby would turn into such a passion. A few years ago, we installed an outdoor kitchen at our home. It included a wood fired brick oven. As a landscape designer and lover of outdoor cooking, I was excited to combine these interests. Cooking with wood was a whole new challenge, and a whole lot of fun.
With only one season of cooking and experimenting under our belt, our daughter Ashley upped the ante. She wanted to serve pizza at her high school graduation party. We made 85 pizzas and served over 200 people that day. Riding this new wave of confidence, we hosted several other events including sports team parties, fundraising events, and even a groom’s dinner. Everyone seemed to love our pizza! We heard time and again “I would love to have an oven like this in my yard.” That’s when it hit me “What if I put an oven on wheels? I could bring the party to the people.”
After a little research, we found a company based in Colorado. They manufacture wood fired brick ovens built right on a trailer. They also consult on how to run a successful catering business. We launched the Rolling Hearth Bistro in 2013, and held our first official event in May of 2014. A love of outdoor cooking and spending time with friends and family turned into a passion for creating and sharing incredible pizzas. You can find us all around the Twin Cities at festivals and farmers markets, concerts and fairs – or maybe in your neighbor’s back yard. Come and say hi to us. Maybe you’ll catch one of the kids Ashley, Matthew, or Nicholas helping out. It has been a fun and exciting journey so far and we are all looking forward to what the future will bring.
